The colored ones are dyed and the very white ones are probably bleached.
Usually 15 - 16 inches with small holes.
We use (and almost everyone else uses) the #2 silk to string these. Or 014 softflex.

Please note: Pearls usually have very small holes.
AND, if they're not white or close to it, they're dyed. Will the dye rub off?
Well, you won't be able to get a dyed-red pearl white again, but you will stain your fingers trying.
